Gooey Reese’s Cheesecake Cookies

Ingredients:

1 cup all-purpose flour
1/2 cup graham cracker crumbs
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/4 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup peanut butter (creamy or chunky)
1/2 cup chopped Reese’s Peanut Butter Cups (about 6-8 pieces)
Optional: extra Reese’s pieces for topping
Directions:

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt. Set this mixture aside.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer. Beat on medium speed until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until combined.

Incorporate the Dry Ingredients: Gradually add the flour mixture to the wet ingredients, stirring until fully incorporated. The dough should be thick and slightly sticky.

Prepare the Cheesecake Filling: In a separate bowl, beat the softened cream cheese and powdered sugar until smooth. Add in the peanut butter and mix until fully combined.

Assemble the Cookies: Scoop out a tablespoon of cookie dough and flatten it into a disk shape. Place a small spoonful of the peanut butter cheesecake filling in the center of the dough. Top with another tablespoon of cookie dough and gently press the edges together to seal the filling inside.

Bake the Cookies: Place the assembled cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are golden brown. Be careful not to overbake as the center should remain soft and gooey.
