Homemade Cheese: A Simple, Delicious Recipe Using Vinegar and Milk

1. Heat the Milk:

  • Pour the 1.5 liters of milk into a large pot. Heat the milk over medium heat, stirring occasionally to prevent it from sticking to the bottom. Heat the milk until it just begins to simmer, around 180°F (82°C). You’ll notice small bubbles forming around the edges of the milk.

2. Add Vinegar:

  • Once the milk has heated up, add 2 tablespoons of apple cider vinegar. Stir gently to mix it in, then allow the milk to sit for a few minutes. The acid from the vinegar will cause the milk to curdle, separating the curds (solid) from the whey (liquid).

3. Let the Curd Form:

  • After about 5-10 minutes, you’ll see the curds beginning to form and the whey separating. If the separation isn’t clear, you can add a little more vinegar and gently stir. Let the milk sit for a few more minutes to allow the curds to fully form.

4. Drain the Curds:

  • Once the curds have separated from the whey, place a fine mesh strainer or cheesecloth over a bowl. Carefully pour the milk mixture into the strainer to separate the curds from the whey. You can save the whey for other uses, such as adding to smoothies or using in baking.

5. Add Butter and Salt:

  • Transfer the curds into a bowl. While the curds are still warm, add 50 grams of melted butter and salt to taste. Mix it well to incorporate the butter and season the cheese. This adds richness and flavor to the cheese.

6. Add Herbs for Extra Flavor:

  • For a delightful, aromatic touch, mix in 1 tablespoon of Provencal herbs (or any herb blend you like). The herbs will give your homemade cheese a Mediterranean flair and enhance the flavor. You can also experiment with other spices or herbs, like garlic, chives, or basil.

7. Shape and Chill:

  • If you prefer a firmer cheese, you can press the curds into a mold or simply shape them into a small log or ball. Place your cheese in the fridge for at least an hour to firm up and allow the flavors to meld together.

How to Enjoy Your Homemade Cheese:

  • As a Snack: Enjoy your homemade cheese on crackers, bread, or as part of a charcuterie board. The texture is creamy, with a slight tang from the vinegar, making it a perfect snack or appetizer.
  • On Salads: Crumble or slice the cheese over fresh salads for added flavor. It pairs wonderfully with greens, tomatoes, and olives.
  • In Pasta or Pizza: Use your homemade cheese as a topping for pasta dishes, pizzas, or even in sandwiches. The rich, creamy texture will elevate your favorite dishes.
  • With Wine: Serve your homemade cheese with a glass of wine for a simple and satisfying treat.

Why Make Your Own Cheese?

  • Fresh and Customizable: When you make cheese at home, you have full control over the ingredients. You can adjust the level of salt or add herbs and spices to create a cheese that suits your taste perfectly.
  • Cost-Effective: Homemade cheese is often less expensive than store-bought varieties, especially when you can use ingredients you already have at home.
  • No Additives or Preservatives: Store-bought cheeses often contain preservatives and additives. By making your own, you avoid these unwanted extras and enjoy a pure, natural product.
  • Fun and Rewarding: Making cheese at home is a fun kitchen project that requires little more than a few ingredients and some patience. The result is incredibly satisfying and enjoyable.

Tips for Success:

  • Quality Milk: For the best results, use fresh, full-fat milk. Whole milk will give you a richer, creamier cheese compared to skim or low-fat milk.
  • Adjust the Flavor: Feel free to experiment with different herbs and spices. Try adding chili flakes for a spicy twist or dried oregano for a more Italian-style cheese.
  • Make it Your Own: Once you get the hang of making this basic cheese, you can experiment with aging it (just like traditional cheese), or adding more complex ingredients like garlic or sun-dried tomatoes.

Final Thoughts:

Homemade cheese made with vinegar and milk is an incredibly simple and cost-effective way to enjoy fresh, delicious cheese without having to buy it at the store. With just a few ingredients, you can create a versatile, flavorful cheese that works well in countless dishes. Whether you eat it fresh or add your own herbs for extra flavor, making cheese at home can be a fun and rewarding experience. So next time you’re craving cheese, skip the store and make your own—you won’t be disappointed!
